Ingredients:
3 C. orange or yellow pepper, de-stemmed, deseeded, and diced 3/4 C. white wine or white grape juice 1/3 C. shallot, finely chopped 1/3 C. lemon juice 1/3 C. olive oil 3 T. tamari 4 tsp. curry powder 1/4 tsp. salt 1/8 tsp. pepper 1/3 C. freshly chopped basil 1/3 C. freshly chopped parsley
Directions:
In a blender, place all of the ingredients, except the chopped basil and parsley, and blend for 1-2 minutes or until thoroughly combined. Add the herbs and blend an additional 10 seconds. Transfer marinade to a bowl. Use as a marinade for vegetables or tofu steaks. It's very good on kabobs when grilled. It works well for steamed or breaded mushrooms too.
