Modifying Recipe "Cashew and Rice Loaf"

Ingredients:
1 cup finely ground raw cashews 1 med. cooking onion finely diced 1 cup soft whole wheat bread crumbs 1 cup tofu or nut milk 1 cup cooked brown rice 2 T. soy sauce 1 tsp salt or to taste 1 tbsp dried or fresh parsley 1 tsp celery salt
Directions:
Thoroughly mix all ingredients together in a large bowl. Lightly pack mixture in an oiled 4" x 8" loaf pan and bake at 350° for approximately 40 minutes or until loaf is firm. Turn out of pan onto a serving dish. Garnish with cranberry sauce if desired.
