Ingredients:
1 3/4 cup water 3/4 cup dried yellow or green lentils (rinse & drain) 1/4 cup chopped onion 1 to 2 T. fresh chopped cilantro 1/2 tsp. each salt, pepper, cayenne pepper & ground cumin 1 clove minced garlic 4 tostada shells (fry corn tortillas in oil, both sides till crisp) 2 cups chopped veggies (broccoli, zucchini, cauliflower, tomatoes, etc.) 3/4 cup soy cheddar
Directions:
In a medium saucepan, stir together first seven ingredients. Bring to a boil. Reduce heat, cover and simmer for 25 to 30 minutes, or until lentils are tender, and most of liquid is absorbed. Use a fork to mash the cooked lentils. Spread the lentil mixture on the tostada shells. Top each with veggies and cheese. Place on a large baking sheet. Broil 3 to 4 inches from heat for about 2 min. or until cheese melts.
