Ingredients:
1 ready-made graham cracker crust 16 oz. can crushed pineapple, drained 2 T. peach or apricot jam (100% fruit only) 2 tsp. shredded coconut 1/4 tsp. ground cinnamon 10 oz. soft tofu 3/4 cup rice milk 1/4 cup honey 1 1/2 T. cornstarch 1 tsp. vanilla extract 1/2 tsp. lemon juice (or extract) 1/4 tsp. each almond and coconut extracts 1 or 2 graham crackers
Directions:
In a medium bowl, combine pineapple, jam, coconut & cinnamon. Mix well. Spoon evenly into graham cracker crust. In a blender, combine tofu with remaining ingredients except the crackers. Blend until smooth. Pour tofu mixture into a medium saucepan. Bring to a boil over med. heat, stirring constantly. Reduce heat, and cook while stirring for 2 more minutes. Spoon mixture over pineapple. Crush graham crackers, and sprinkle over the top. Chill thoroughly 1 to 2 hours.
