Modifying Recipe "Banana Pudding"

Ingredients:
box silken tofu 1 large banana or 2 small 2 1/2 T. arrowroot powder 2 T. maple syrup 2 tsp vanilla 3 T. rice milk
Directions:
Put all ingredients into a blender and puree until smooth. Then pour into a medium saucepan and cook on med heat, stirring constantly until mixture thickens (about 3-4 minutes) pour into dessert glasses and chill at least 3 hours before serving. I usually chunk up bananas and almond cookies into each glass before pouring in the pudding but you don't have to. :-) (Don't let your children near this unless you are prepared to share. *grin*)
