Ingredients:
2 1/2 cups unbleached white flour 1 1/2 tsp ground ginger 1 tsp cinnamon 3/4 tsp baking soda 1/2 tsp salt 1/2 cup soy margarine, melted 1/2 cup brown sugar 1 cup molasses 1 egg replaced 3/4 cup orange juice
Directions:
Grease and flour a 9x9 square baking pan. In large mixing bowl combine flour, ginger, cinnamon, baking soda and salt. In a separate bowl combine melted margarine, brown sugar, molasses, egg replacer and juice. Add wet mixture to dry and combine. Pour into pan and bake for 45 minutes at 325 degrees until a toothpick inserted in center comes out clean. If you use an 8x8 square pan, or double and use a 9x13 pan, increase the cooking time slightly.
