Ingredients:
Basic Mix: 1/2 cup regular oats 2 cups unbleached flour 1/2 cup WW flour 1/2 cup cornmeal 1/4 cup wheat bran 1/4 cup wheat germ 1/4 cup fructose 2 tsp. baking powder 1 1/2 tsp. salt 1 tsp. baking soda Additions To Make Pancakes: 1 cup milk (I add 1 tsp white vinegar to rice milk to mimic buttermilk) 3 T. oil 2 eggs replaced 1 1/2 c pancake mix cooking spray unless using non-stick skillet
Directions:
The basic mix can be made in advance and stored, refrigerated in airtight containers. Process oats in food processor, then add other ingredients and continue processing. Makes about 4 cups. To make pancakes from the basic mix, combine milk, oil and replaced eggs. Stir well. Add pancake mix and stir gently until smooth. Batter will be slightly thick. Spoon about 1/4 cup batter onto a hot nonstick griddle or skillet coated with cooking spray. Turn when covered with bubbles and edges look cooked.
