Modifying Recipe "Gingerbread Waffles"

Ingredients:
2 1/2 cups unbleached flour 1/4 cup brown sugar, packed 4 tsp. baking powder 1 tsp. baking soda 1 T. ground ginger 1 tsp. ground cinnamon 1 tsp. ground allspice 1/2 tsp. salt 2 eggs replaced 1 1/2 cups soured rice milk* 1/4 cup molasses 6 T. applesauce 3/4 cup raisins (optional)
Directions:
*put 2 tsp. vinegar into a measuring cup then pour milk on top to equal 1 1/2 cups. Set aside for 5 minutes or until called for in recipe. Heat waffle iron and/or prepared according to manufacturers instructions. Stir together brown sugar, baking powder, baking soda, ginger, cinnamon, allspice, and salt in mixing bowl. Set aside. In separate bowl whisk together egg replacer until foamy. Add rice milk, molasses, applesauce and raisins. Add liquid mixture to dry ingredients, stirring just until blended. Pour batter from cup or ladle onto center of hot waffle iron. Bake as per manufacturer instructions.
