Ingredients:
1 cup onion, chopped 1 cup carrots, sliced 1/2 cup celery, sliced 3 cups eggplant, peeled and cubed 1 cup green pepper, diced 3 cloves garlic, minced olive oil 6 cups unchicken broth 3/4 cup red lentils 3/4 cup green lentils 1 1/2 cups tomato, chopped 1/2-1 cup dried apricots, sliced 1/2 tsp. cinnamon 1/2 tsp. allspice 1/2 tsp. cayenne 1 T. paprika 1 1/2 tsp. salt 3 T. parsley soy yogurt green onion
Directions:
Saute veggies and garlic in olive oil. Place remaining ingredients in crock pot and set on high. Add veggies once they are tender. Simmer for 1 hour on high then for one more hour on medium. Adjust seasonings to your taste. Garnish each bowl with plain soy yogurt and green onion. Serve hot.
