Ingredients:
1 T. olive oil 1 T. minced garlic black pepper to taste 1 tsp. ground cumin 1 tsp. ground curry powder 1 tsp. chili powder 1 cube vegetable bouillon 2 cups hot water 1 T. soy sauce 1 cup grated or finely chopped veggies (carrot, onion, peppers, zucchini etc) 1/2 apple, cubbed small 2 T. raisins 1 cup uncooked mixed grains (pick 2 or more of the following: short grain rice, barley, oat groats, quinoa, wheat berries, kamut, lentils or amaranth)
Directions:
In a medium sauce pan, brown garlic in oil over a med-low temp. Slowly add spices, allowing each to brown along with the garlic. Add hot water, bullion cube (breaking it up as you stir), soy sauce, veggies, apple and raisins. Bring to a soft boil and stir in grains. Cover and simmer on low until water is absorbed. Plan on 1/2 cup uncooked grain per person if used as a main dish and 1/4 cup uncooked grain per person for use as a side dish. These are large servings so there will most likely be leftovers the first time. Adjust as needed for your family size.
