Ingredients:
3 eggs replaced or 3/4 cup silken tofu 1 cup WW flour 1 cup rice or soy milk 1 tsp baking powder 2 cups grated cheese 2 cups chopped fresh spinach 2 T. minced garlic 2 T. nutritional yeast 1 tsp crushed red pepper salt and pepper to taste
Directions:
Preheat oven to 350 and lightly grease a 13x9 inch baking pan. In a large bowl, combine all of the ingredients and stir until well mixed. Pour into the pan and spread evenly. Bake for 30-35 minutes or until cooked through. Cool on a wire rack for 5 minutes or so before cutting into small squares for serving.
