Ingredients:
In large bowl, mix together: 2 cups vital wheat gluten flour 2 T. nutritional yeast 2 tsp. poultry seasoning 1 tsp garlic powder 1 tsp onion powder 1/2 tsp coriander 1/2 tsp pepper In small bowl, mix together: 1 T. oil 1 T. seasoning mix (dry, like Mrs. Dash or something similar) 1/2 tsp liquid smoke 1 cup water In another bowl, mix together: 2 cups water 2 T. unchicken powder 1/2 tsp coriander 1/2 tsp cumin 1 clove garlic, peeled and minced 1 T. oil extra unchicken broth for basting
Directions:
Pour small bowl into flour mixture. Knead into a ball(add additional water or flour if needed to get proper consistency). Flatten gluten ball slightly, and put into a greased baking pan. Leave room around and above gluten for liquid. Pour liquid (from "another bowl") mixture over gluten. Cover pan with foil. Roast at 325 for 2-3 hours, or in a lower oven for even longer. Replenish fluid as needed (using unchicken broth) or the gluten will burn. Check for doneness occasionally. When done, cool roast slightly before serving.
