Ingredients:
1 1/2 cups corn meal 1 cup soy flour 2 tsp. baking powder 1 tsp. salt 1/8 cup raw sugar or fructose 1 cup soy milk 1 cup water or orange juice 1/4 cup vegetable or olive oil
Directions:
Preheat oven to 350. Mix dry ingredients together. Add liquid ingredients to dry ingredients. Pour batter into well-oiled pan (I use a preheated cast iron skillet sometimes) and bake for 30 minutes or until knife comes out clean. If you are baking over chili, you may need to add five minutes or so to this time. You can add corn, chopped broccoli or chopped peppers to this mixture as well.
