Ingredients:
1/2 onion, diced 1/2 green pepper, diced 1/2 red pepper, diced 1/2 orange pepper, diced 1/2 yellow pepper, diced 1/2 small zucchini, grated 1/2 small yellow squash, grated 5 cloves garlic, minced or pressed 2 tsp. oil 1 can black beans 1 can kidney beans 1 can pinto or chili beans 1 1/2 cups water 2 cups TVP 3 cups chopped tomatoes 1/2 cup jalapeno peppers, diced 1 pkg chili seasoning 2 T. crushed red pepper 1 T. cumin 2 tsp. paprika salt and pepper to taste chili powder to taste
Directions:
Place first nine ingredients into thick kettle. Saute on medium-high for five minutes, stirring occasionally. Add beans without draining away liquid. Add water, TVP, tomatoes, peppers and seasonings. Cover and bring to a bubble around the edges, stirring occasionally. Turn to low and simmer 15-20 minutes then taste. Correct spices as necessary.
