Modifying Recipe "Tofu Pancakes"

Ingredients:
10-12 ounces tofu, firm 1 cup soy milk 2 T. canola oil 2 T. honey, maple syrup or molasses 1 tsp. lemon juice 1 tsp. vanilla 3/4 cup WW flour 3/4 cup unbleached flour 1 tsp. baking powder 1/2 tsp. baking soda 3/4 tsp. salt
Directions:
Place all wet ingredients in blender and blend until smooth. Sift together all dry ingredients. Add dry ingredients to blender mixture and mix until smooth. Preheat non-stick skillet on med/low heat. Pour pancake batter into skillet to make the size pancakes desired. When the top of pancake begins to bubble, turn pancake over and cook until lightly browned. Remove to cooling rack or serve immediately.
