Ingredients:
3 to 4 cups peaches or berries 1/4 to 1/3 cup of fructose 1/3 cup of water (or juice left over if using canned peaches) 1 tsp lemon juice 1 cup Bisquick or substitute 2 tablespoons fructose 1/3 cup rice or soy milk cinnamon (optional)
Directions:
Put peaches in the crock pot. Mix in fructose, water (or reserved liquid) and lemon juice. Set them on high, cover and cook for 2hrs or until they are boiling really well. After the mixture is boiling really well (1.5 to 2hrs with my crock pot set on high) you can mix the dumplings. In a bowl mix the Bisquick and fructose. Slowly stir in 1/3 cup rice or soy milk. You want the dough to be drier than wet so you can decrease this amount slightly if needed. Blob this dough into six or seven big splats on top of the boiling peaches. Sprinkle with cinnamon if you want and cover quickly. Don't peek at them since the steam is what will cook them through. It usually takes about a half hour for them to be cooked through.
