Ingredients:
2 ½ cups all-purpose white flour 1 cup sugar 1 ½ teaspoons baking powder 1 teaspoon salt ½ teaspoon baking soda 3 replaced eggs 1 cup fresh orange juice ½ cup canola oil 2 tablespoons grated orange zest 2 cups fresh cranberries (8 ounces) ½ cup coarsely chopped pecans
Directions:
Preheat oven to 350 degrees F. Lightly oil a 9-by-5-inch loaf pan or coat it with nonstick cooking spray; set aside. In a mixing bowl, whisk flour, sugar, baking powder, salt and baking soda. In a small bowl, whisk egg whites, egg, orange juice, oil and orange zest. Add to the dry ingredients, mixing just until combined. Fold in cranberries and pecans. Transfer the batter to the prepared pan and bake for 50 to 60 minutes, until a cake tester inserted into the center of the loaf comes out clean.
