Ingredients:
1 cup oil 3 eggs replaced 1 15oz can pumpkin puree 1 tsp vanilla extract 2 C. raw sugar 2 1/2 C. WW pastry flour 1 tsp baking soda 1 tsp nutmeg 1 tsp allspice 1 tsp cinnamon 1 tsp cloves 1/2 tsp salt 1/2-1 C. chopped walnuts
Directions:
Mix oil, replaced eggs, pumpkin and vanilla together. Sift the flour, sugar, baking soda, nutmeg, allspice, cinnamon, cloves and salt together. Add the flour mixture to the pumpkin mixture and mix until just combined. Stir in chopped nuts. Pour batter into sprayed bundt pan. Bake at 350 degrees for 1 hour or until a knife inserted in the middle comes out clean. Let cake cool in pan for 5 minutes then turn out onto a plate.
