Ingredients:
In a large bowl, combine well: 2 eggs replaced (I've used both tofu and powdered replacers with good results) 1/4 C. raw sugar 1/2 C. oil 1 C. milk of choice* (see note below) 1 tsp vanilla 1/2 tsp white vinegar In a smaller bowl, combine well: 2 C. granola 1 C. unbleached flour or WW pastry flour (or a mix of the two) 4 T. instant protein 2 tsp baking powder 2 tsp cinnamon 1/2 tsp baking soda 1/2 tsp salt
Directions:
Combine wet and dry mixtures and fold together gently until just mixed. Spoon into a sprayed muffin pan. Sprinkle each muffin top with granola if desired. Bake at 400 for 15 to 20 minutes. Remove from pan and cool on rack. Makes 12 large muffins. *An hour before you want to make these (or at least a half hour) mix your milk of choice with the white vinegar and allow it to "sour" at room temperature.
