Ingredients:
1 cup cold cooked rice of choice 1 cup milk of choice 1/4 cup oil of choice 1/4 cup raw sugar 2 eggs replaced 1 1/2 cup WW pastry flour 3 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt
Directions:
Mix wet ingredients in a bowl and dry ingredients in another bowl. Pour wet ingredients into dry. Stir until just mixed. Pour into greased muffin tins and bake at 400 for 15-20 minutes. Remove to wire rack for cooling or serve hot. This is a very basic recipe. The additions you can make are only limited by your imagination :-) Replace the oil with peanut butter. Replace sugar with ground nuts then sweeten with liquid stevia Add a banana in place of the oil or in addition for moister muffins Use maple syrup to sweeten Add oatmeal in place of half the flour Other good additions are nuts, seeds, dried fruit, chocolate chips etc.
