Modifying Recipe "Curried Tempeh"

Ingredients:
1 pound tempeh (sesame is good for this) 2 cups veggie broth 3 T olive oil 1/2 cup chopped yellow onion 1 celery stalk, chopped 1/2 cup ground nuts (pecans, cashews, macadamia) 2 T curry powder 1 tsp cumin 1/2 tsp coriander 1/2 tsp turmeric Salt & pepper 1/2 cup chopped apple 1/2 cup raisins
Directions:
Cube tempeh and all to rest 10min. In a large skillet, simmer veggie broth and tempeh cubes for 15-20min. Drain tempeh, reserving broth, and lightly cook the onion and celery in the oil. Return tempeh cubes to the skillet and sprinkle with ground nuts. Lightly fry another minute or two. Pour 1 cup of reserved broth over the mixture and add all remaining ingredients. Cover and simmer to combine flavors. Use more broth to get desired texture and serve over cous cous or wild rice.
