Ingredients:
1 cup soymilk 2 cups of cooked or canned pumpkin 3/4 cups Sucanat or raw sugar 1 TB molasses 3 TB oil 1/2 tsp salt 1/4 c cornstarch 1 teaspoons cinnamon 1/2 teaspoon ground dry ginger 1/2 teaspoons nutmeg
Directions:
Pre-heat oven to 425 degrees F. Blend all ingredients in a food processor or with a blender until smooth and cream-like, for about four minutes. The result should be a light orange-colored paste with no lumps of pumpkin. Put the mix into a pre-made, unbaked pie crust; Bake 10 minutes at 425 degrees, turn oven down to 350 degrees. Bake 40 to 50 minutes or until the filling is set in the middle.
