Modifying Recipe "Chickpea Muffins"

Ingredients:
1 cup dried fruit 1 cup thick juice (I use apricot nectar) 1 can chickpeas, drained and rinsed 2 eggs replaced 1 cup milk (I use coconut) 1 cup brown sugar 1/4 cup oil 1/3 cup flaked coconut 2/3 cup nuts 2 1/2 cup flour 2 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt
Directions:
Simmer dried fruit in juice for about 10min. Combine in food processor with chickpeas and mix well. Add replaced eggs, milk, sugar and oil. Set aside while you mix dry ingredients in another bowl. Once all dry ingredients are well mixed (including nuts and coconut) pour wet ingredients in and stir well. Fill greased or lined muffin cups. Bake at 350 for 20-25min.
