Modifying Recipe "Plain Pie"

Ingredients:
1 1/4 C sugar (or less, any type of sugar) 1 C soured coconut milk 1/2 C biscuit or pancake mix 1/3 C melted margarine 4 T flaxmeal or ground flaxseed 1 tsp vanilla extract (or any other extract)
Directions:
An hour before you start place the coconut milk into a bowl with 1 tsp lemon juice and allow to sour at room temperature. Preheat oven to 350 degrees. Prepare a pie plate, or similar size dish with margarine. Grind flaxseed and mix into soured milk. Melt margarine and stir in as well. Set aside while gathering and measuring dry ingredients. Lightly stir together dry ingredients then pour wet ingredients over the dry. Add extract then blend for 1 minute with a handheld electric mixer. Pour mixture into prepared pan. Bake for about 50 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes. Serving suggestions: Drizzle chocolate syrup (go light, this is a sweet pie) and sprinkle nuts over the top. Berries and Hip Whip top it nicely too. So does ice cream or fried apples.
