Ingredients:
Pie: 6 oz. can unsweetened apple juice concentrate 1 tbsps non-hydrogenated vegan margerine 2 tbsps cornstarch or arrowroot 1 tsp cardamom 4-5 apples 1/2 tsp each: cinnamon, nutmeg, salt 1 prepared 10" deep dish pie crust w/extra for lattice topping (recipe follows) Easy Vegan Pie Crust: 1-1/2 cups flour (white, whole wheat pastry or combo) 1/2 tsp sea salt 2 tbsps vegan sugar or date sugar 1/2 cup oil 2 tbsps soymilk or orange juice
Directions:
Pie: Heat the juice and thicken with cornstarch. Add margarine, and spices. Peel and slice the apples. Dump into pan of hot juice and stir. Pour into prepared pie shell and top with lattice. Bake at 350C for 45 minutes. Pie Crust: Mix dry ingredients. Add liquids and mix with a fork. Pat into 9" pan with fingers. If pre-baked crust is needed, bake at 425 degrees for 10-12 min.
