Ingredients:
1 cup uncooked millet 1 cup chopped dates (or raisins) 1 cup flaked coconut 4 cups milk 1/2 cup soy creamer (or coconut milk) 1/2 cup sugar 1 teaspoon rum extract 1 teaspoon cinnamon 1/2 teaspoon nutmeg
Directions:
Mix all ingredients together in a bowl. Pour into sprayed pan (a 7x11 works perfectly) and bake at 350. Stir after about a half hour of baking time and again at the 45min point. Garnish with more nutmeg and serve warm. Hints: You can add nuts if you like, just slightly cut back on the dates and/or coconut. Also, chop them small. If you only add 1/4 cup or so, you don't need to adjust anything at all with the other ingredients. You can also use rum instead of rum extract, but you'll need between 1/4 and 1/2 cup (depending on taste) which adds quite a bit additional fluid. Cut back on the milk, not the creamer. For a thicker pudding, add 2-4 T flaxmeal to the milk 10min in advance. Allow to sit, then add all the ingredients as stated.
