Ingredients:
1/2 cup cooked white beans 1 t oil of your choice 1/4 cup vital wheat gluten 1/4 cup whole wheat panko crumbs 3 T reduced-sodium soy sauce 2 T nutritional yeast 2 T maple syrup 1 T liquid smoke 1 T tomato paste 1 big clove garlic, pressed
Directions:
place all ingredients in a food processor, pulse and scrape sides until all is smooth and paste-like. preheat oven to 375F. line a cookie sheet with parchment paper or Silpat. grab about 1 1/2 T worth of seitan paste, and pat down in the shape of bacon strips, spreading it as thinly as possible. bake for 15 minutes, turning once halfway through baking time. if you’re not eating it all right then, you might want to pan-fry them for a few seconds to make them crispy again the next time. http://havecakewilltravel.com/2008/06/03/crispy-seitan-bacon/
