Ingredients:
1 extra firm tofu pressed a bit 3 jalapenos seeded chopped 1/2 cup tofutti soy sour cream 1/2 cup soy milk 1/4 cup almond meal (I grind up almonds) 1/4 cup nutritional yeast flakes (not brewers yeast) 1 onion chopped 2-3 tbs soy bacon bits 1/2 tsp dried mustard 1/2 tsp red pepper flakes 2 cloves garlic minced or 2 teaspoons garlic powder salt and pepper to taste par baked pie crust
Directions:
Chop jalapeno and onion and sautee until soft and browning. Blend up all the other ingredients except bacon bits (I use and immersion blender but a mixer works too) then stir in jalapeno, onion and bacon bits or blend quickly so you don't chop up the veggies too much. Taste it for flavor and make sure it's salted enough since the tofu is bland. Pour into a par baked pie crust and bake for about an hour. There are all sorts of variations for this quiche. You can do any flavor you like, spinach, mushrooms and so on...SO good! I'd imagine it can be done without a crust too.
