Ingredients:
2 cups TVP 1 jar hot salsa 1 lg can tomato sauce (I use a large can of whole or diced tomatoes) 1 sm can diced jalepenos 3 can black beans 3 can kidney beans 3 can chili beans 3 can pinto beans 2 package chili seasoning 2 lg onion chopped 2 sm zucchini grated 2 gr pepper chopped (or red, yellow or a mix) 2 tsp cumin 4 tsp chili powder 2 tsp crushed red pepper salt and pepper to taste
Directions:
In small bowl combine TVP and chili seasoning mix. Slowly stir in boiling water until the TVP looks like ground beef. If you are unsure, go toward the dry side at first. You can always stir in slightly more water later. Stir until completely mixed and set aside. In large pot place a small amount of water, the onion, pepper and zucchini and cook over medium heat until they are tender. Add remaining ingredients. Do not drain jalepenos or beans. Add the liquid from both to the mix. Stir well, cover and continue cooking over a medium heat. If mixture boils, turn it down to keep it simmering gently for 30 minutes. Add TVP mixture and stir thoroughly. Heat through and serve. (it's GREAT over elbow noodles too)
