Ingredients:
1 cup boiling water 1/3 cup barley rinsed well 1 tsp. veggie stock powder 4 cups fresh mushrooms 1/4 cup onion minced 1 1/4 cups firm tofu 1 tsp. dried dill weed 2 T. nutritional yeast 1/4 cup wheat bran 1/4 cup brown rice flour 6 oz. soy cheddar
Directions:
Combine water, barley and broth powder and simmer until barley is tender. Chop mushrooms coarsely and combine with onions and the cooked barley. Combine remaining ingredients, add to mushroom barley mixture, and mix well. Form 8 patties and grill on a nonstick surface (or sprayed grill) until brown, flipping to evenly cook both sides.
