Ingredients:
¼ cup olive oil 1 cup raw sugar 3 ripe bananas ¼ cup unsweetened almond milk 1 tsp. vanilla extract 2 cups gluten-free all-purpose flour mix (I use Jennifer's Way) 1 tsp. baking soda 1 tsp. Kosher salt 1 tsp. cinnamon ¼ tsp. allspice 1 cup walnuts, chopped
Directions:
Preheat the oven to 350 degrees. In a bowl, combine the oil and the sugar. Add the bananas to this mix and mash them up. Add the milk and the vanilla. Mix all the wet ingredients well. In another bowl, combine the flour, baking soda, salt, cinnamon, and allspice. Add the wet ingredients to the dry ingredients and mix to just combine. Add the chopped nuts to the batter. Using an ice cream scoop or a spoon, fill a muffin tin that has been oiled about 2/3 full. Bake for 25 minutes or until a toothpick comes out clean.
