Ingredients:
1 cup soy milk 1 teaspoon apple cider vinegar 1 1/4 cups all-purpose flour 2 tablespoons cornstarch 3/4 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1/2 cup margarine 3/4 cup sugar 2 teaspoons vanilla extract 1/4 teaspoon almond extract
Directions:
Preheat oven to 350 degrees. Oil and flour an 8x8 baking dish. Whisk the soy milk and vinegar in a measuring cup and set aside. Sift the flour, cornstarch, baking powder, baking soda and salt into a large bowl and mix. In a separate bowl cream margarine and sugar for about 2 minutes until light and fluffy. Beat in vanilla and almond extract then alternate beating in soy milk and dry ingredients, stopping to scrape the sides of the bowl a few times. Pour into prepared pan and bake for 20 to 22 minutes until done. Transfer to a cooling rack and cool completely before frosting.
