Ingredients:
1 med. cooking onion finely diced 1/2 red pepper finely diced 1/2 yellow pepper finely diced 1/2 green pepper finely diced 1 cup finely ground raw cashews 1 cup soft whole wheat bread crumbs 1 cup firm tofu 1 cup cooked brown rice 2 T. soy sauce 2 tsp salt or to taste 1 T. dried or fresh parsley 14 tsp celery salt
Directions:
Saute' the first four ingredients. Thoroughly mix all ingredients together in a large bowl. Lightly pack mixture in an oiled or sprayed 4x8 loaf pan and bake at 350 for approximately 40 minutes or until loaf is firm. Turn out of pan onto a serving dish. Garnish with cranberry sauce if desired.
