Fettuccine Avocado
Ingredients:
- 2 T. olive oil
- 1/4 cup sherry wine vinegar
- 1/2 cup chopped fresh basil
- 2 T. chopped green onion
- 1/4 cup diced green bell pepper
- 1/2 cup marinated dried tomatoes drained
- 2 T. chopped walnuts
- 1 whole California avocado peeled and diced
- 1 pound dried fettuccine noodles or other dry pasta
Directions:
Mix together in food processor the olive oil, vinegar, basil and green onion. Add bell pepper, dried tomatoes, walnuts and avocado process again.
Cook pasta following package directions. Drain pasta and add to bowl with other ingredients while pasta is still hot. Toss all ingredients. Serve immediately.
