Tomato/Vodka Sauce



Heat 1-2 T. olive oil in a large skillet and add one small diced onion.

Sauté until limp. Add 1 tsp. bottled crushed garlic (or 2 minced garlic cloves). Stir and sauté another minute. Add 2 - 15 oz. (or 1 - 28 oz.) cans diced tomatoes with their juice, 1/2 cup good vodka, and 2 tsp. dried red pepper flakes. Simmer for about 15 minutes until somewhat thickened. Add 1/2 cup soy cream, 2-3 T. minced, fresh Italian parsley, and salt to taste (1/4 to 1/2 tsp.), and simmer to marry the flavors (about 5 minutes). Serve over the penne.
