Burgers (Nut)



Saute the onion in the olive oil over medium heat until nearly transparent, then stir in the celery. Cook for 5 minutes, then mix in the flour and herbs, and cook for two more minutes. Add the vegetable broth, and stir. Then add the nuts, yeast, soy sauce, peanut butter, breadcrumbs, and salt and pepper. Let cool, then pat into 4 burgers, coating with the dried breadcrumbs. Saute in the remaining olive oil for approximately 2-3 minutes per side, or until crisp. Let drain, serve hot on a bun with your favorite burger-toppers.
