Lentil Tostadas



In a medium saucepan, stir together first seven ingredients. Bring to a boil. Reduce heat, cover and simmer for 25 to 30 minutes, or until lentils are tender, and most of liquid is absorbed. Use a fork to mash the cooked lentils.

Spread the lentil mixture on the tostada shells. Top each with veggies and cheese. Place on a large baking sheet. Broil 3 to 4 inches from heat for about 2 min. or until cheese melts.
