Tofu Ricotta
Ingredients:
- 2 packages tofu
- 2 T. lemon juice
- 4 T. nutritional yeast
- 1/4 cup minced fresh parsley (or sub basil or mix half and half)
- 1 head roasted garlic (if you hate garlic, omit this, but double the nutritional yeast) salt to taste
Directions:
Drain tofu 30 minutes. Mash ingredients together with a fork. Let sit in frig overnight.
