Baked Lentils and Rice
Ingredients:
- 1 green or red pepper, chopped
- 1 yellow or orange bell pepper, chopped
- 2 stalks celery, sliced thinly
- 2 carrots, grated
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 cup lentils, rinsed
- 1/2 cup rice, rinsed
- 2 cups unbeef or vegetable broth (or just slightly more)
- 1/8 tsp. powdered saffron
- 2 medium tomatoes, chopped
- 1 cup frozen peas
- fresh parsley of cilantro to taste
- pepper and salt to taste
Directions:
Combine all ingredients in large covered, greased casserole dish. Bake at 350 until both lentils and rice are cooked through and all liquid is absorbed. Add more broth if liquid is absorbed before grains seem tender.
