Peanut Butter/Banana Muffins

Ingredients:

• 1/2 cup peanut butter (or nut butter of choice)
• 1/3 cup honey or brown sugar
• 1/4 cup oil or applesauce
• 2 eggs replaced
• 1 tsp vanilla
• 3 bananas, broken into pieces
• 1 cup whole wheat flour
• 1/2 cup oatmeal
• 1 1/2 tsp baking powder
• 1/2 tsp baking soda
• 1 tsp cinnamon

Directions:

Mix all ingredients and pour into greased muffin tins. Bake at 400 for 20-25 minutes. Makes approx 12 muffins.
