Apple/Raisin Bread



Pour the boiling water over the applesauce and raisins. Set aside to cool to room temperature. Mix together yeast and WW flour in a large bowl. Stir in water/fruit mixture until just blended (about 1 minute) then let sit for 15 minutes to sponge. Add margarine, cinnamon, salt and protein powder. Stir in bread flour 1 cup at a time until a nice dough is formed. Knead 4-6 minutes by mixer or 8-10 minutes by hand. Place dough in oiled bowl and flip oil side up. Let rise until doubled in bulk. Punch down and form into two loaves. Place in greased loaf pan and allow to rise again for about 1 hour, or until almost doubled. Bake at 350 for 35-40 minutes, or until well browned.
