French Toast Casserole

Slice the entire loaf in thicker than average slices. Spread soy or canola margarine on each. Cut into fourths on the diagonal. Place all the slices into a greased 9x13 baking dish. Make sure to cover as much of the bottom as possible, including the corners. Only overlap as necessary.

Sprinkle the bread with both brown sugar and cinnamon to taste. Whisk together remaining ingredients beginning with the replaced eggs. Pour over bread and cover tightly. Allow dish to stand overnight in the frig.

Place cold baking dish in cold oven. Turn oven on to 375 and bake 45 minutes or until set. Serve warm with syrup.
