Armenian Lentil Soup
Ingredients:
- 1 cup onion, chopped
- 1 cup carrots, sliced
- 1/2 cup celery, sliced
- 3 cups eggplant, peeled and cubed
- 1 cup green pepper, diced
- 3 cloves garlic, minced
- olive oil
- 6 cups unchicken broth
- 3/4 cup red lentils
- 3/4 cup green lentils
- 1 1/2 cups tomato, chopped
- 1/2-1 cup dried apricots, sliced
- 1/2 tsp. cinnamon
- 1/2 tsp. allspice
- 1/2 tsp. cayenne
- 1 T. paprika
- 1 1/2 tsp. salt
- 3 T. parsley
- soy yogurt
- green onion
Directions:
Saute veggies and garlic in olive oil.
Place remaining ingredients in crock pot and set on high. Add veggies once they are tender. Simmer for 1 hour on high then for one more hour on medium. Adjust seasonings to your taste.
Garnish each bowl with plain soy yogurt and green onion. Serve hot.
