Meatball Soup



Just use veggie broth (about 8 cups) then add some veggies of choice (not as much as you would for veggie soup though) and garlic, basil, oregano and pepper. I use big chunks of red pepper in mine and loads of nutritional yeast. Let it simmer for just a bit then add some noodles and cook until almost finished and add the meatballs. Heat all the way through and serve. I go heavy on the peppers and onions. I cut them very large. If you have the ends of green onions laying around they are great to use too.
