Sweet Potato Salad
Ingredients:
- 2 lg sweet potatoes (bake, cool and cut into 3/4 inch cubed)
- 2 lg celery stalks, coarsely chopped
- 1/2 cup thinly sliced red bell pepper
- 1/2 cup coarsely chopped fresh pineapple
- 1/4 cup toasted coarsely chopped pecans
- 1 sm green onion, thinly sliced
- chives to garnish
- Dressing:
- 2 T. plain yogurt
- 1 T. Dijon mustard
- 1/2 tsp salt
- 1/4 tsp black pepper
Directions:
Mix the dressing in a large bowl and mix in everything else GENTLY (sweet potatoes get mushy). Use chives for garnish.
