Veggie Chili
Ingredients:
- 1/2 onion, diced
- 1/2 green pepper, diced
- 1/2 red pepper, diced
- 1/2 orange pepper, diced
- 1/2 yellow pepper, diced
- 1/2 small zucchini, grated
- 1/2 small yellow squash, grated
- 5 cloves garlic, minced or pressed
- 2 tsp. oil
- 1 can black beans
- 1 can kidney beans
- 1 can pinto or chili beans
- 1 1/2 cups water
- 2 cups TVP
- 3 cups chopped tomatoes
- 1/2 cup jalapeno peppers, diced
- 1 pkg chili seasoning
- 2 T. crushed red pepper
- 1 T. cumin
- 2 tsp. paprika
- salt and pepper to taste
- chili powder to taste
Directions:
Place first nine ingredients into thick kettle. Saute on medium-high for five minutes, stirring occasionally. Add beans without draining away liquid. Add water, TVP, tomatoes, peppers and seasonings. Cover and bring to a bubble around the edges, stirring occasionally. Turn to low and simmer 15-20 minutes then taste. Correct spices as necessary.
