Walnut Spread
Ingredients:
- 1 cup well-drained silken tofu (let it rest on towels for an hour or more)
- 2 T. lecithin granules
- 2 T. brown rice vinegar or red wine vinegar
- 2 T. miso
- 2 T. nutritional yeast
- 1 T. flaxseed oil
- 2 tsp. ground yellow mustard seeds (1 T. seeds)
- 1 tsp. tarragon
- 1 tsp. white pepper
- 1 cup black walnuts
- 1 cup regular walnuts
Directions:
In a food processor, combine all the ingredients except the walnuts and process. Add the walnuts and process until they are finely chopped.
Spread on bread or crackers. Store in refrigerator.
