Russian Dressing

Ingredients:

• 1/2lb firm tofu
• 3 T. rice syrup
• 1 T. lemon juice
• 1 T. canola oil
• 1 tsp prepared mustard
• 2/3 cup chopped sun-dried tomatoes
• 2/3 cup chopped pickles
• 1 T. chopped red onion
• 1/2 tsp salt

Directions:

Combine all ingredients in a food processor. Puree until creamy.
