Roasted Sweet Potatoes
Ingredients:
- Chunk up 4-6 large sweet potatoes into a bowl. Coat with 1/3 cup olive oil, salt, pepper and oregano. Spread evenly in a sprayed 9x13 baking dish. Chop 1 green pepper, 1 red pepper and 1 large onion. Spread over the top of sweet potatoes. Cover and bake for 30 minutes at 375. Uncover and bake until potatoes are soft when pierced with a fork.
