Kiwi Vinaigrette
Ingredients:
- 4 kiwi fruits, peeled and coarsely chopped
- 1/4 C. red wine or apple cider vinegar
- 1/4 C. canola oil
- 1 T. honey or maple syrup
- salt and pepper to taste (I use white pepper)
Directions:
Place all ingredients into the bowl of a food processor and process until smooth. Serve immediately or refrigerate.
For a yummy variation, replace the kiwi fruit with 1 papaya and 1 mango.
